The holidays are truly a magical time of year!
But they are also a time when many people splurge on lots of rich foods and drinks.
If that includes you, I bet you’re paying the price right now, whether it’s with a few extra pounds or some constipation or diarrhea, or just a bloated and gassy feeling.
But never fear!
Because I am here to guide you in supporting your body’s splurge recovery efforts and getting you back on the road to feeling better.
Here are the two very important things you need to do!
1- Nourish your body back to health
There is nothing like a delicious bowl of hot soup to nourish you, soothe you and make you feel good from head to toe.
Here is the recipe for my homemade chicken soup. Of all the dishes I have created, this is one of the most requested. (Note this recipe is also in the recipe section of my Great Taste No Pain health system !)
Sherry's Homemade Chicken Soup
Serves: 8
1- 3 1/2 to 4 lb. whole chicken
3 quarts chicken broth or stock
6 large carrots, peeled
6 stalks celery
2 large onions, peeled
1 lb. escarole, washed and chopped
6 whole black peppercorns
2 cloves garlic, peeled and chopped
1 handful fresh parsley sprigs
3 sprigs fresh thyme
1 bay leaf
3 tablespoons butter
1 large leek, rinsed and sliced
1 teaspoon Better than Bouillon chicken base or 1 chicken bouillon cube
1 teaspoon fresh ground black pepper
1/3 cup fresh dill, chopped
Put the chicken and broth in a large saucepot or stockpot and place over medium heat. Coarsely chop 2 of the carrots, 2 of the celery stalks and 1 of the onions and add them to the pot.
Add peppercorns, garlic, half of the parsley, the 3 sprigs of thyme and the bay leaf. Add just enough water to cover the chicken if necessary.
Raise heat to high and bring to a boil. Reduce heat and simmer, covered, until chicken is tender, about 1 hour. Remove from heat, remove chicken to a platter and set aside to cool. Pour broth through a strainer set over a large bowl; discard vegetables in strainer and set broth aside.
Slice the remaining 4 carrots and 4 stalks of celery; chop remaining onion and parsley.
Remove skin from chicken and discard. Remove chicken meat from bones, discard bones and chop meat coarsely.
Melt butter in the stockpot, add carrots, celery, onion and leek; sauté until onions begin to soften, about 5 minutes. Add reserved broth and chicken base or bouillon and simmer until vegetables are tender, about 1/2 hour.
Add the chopped chicken, escarole, pepper and dill. Simmer until escarole wilts and is softened.
Serve in deep soup bowls and watch it disappear!
